General description

二糖酵素であるアミログルコシダーゼは、α-グルコシダーゼタイプに属します。Aspergillus属の数種で産生されます。

Application

黒麹菌由来のアミログルコシダーゼは、α-D-グルコシドの加水分解に使用されます。ビールの醸造およびパン、ジュースの製造に使用できます。シグマのアミログルコシダーゼは、骨格筋の脂質蓄積を研究するためのグリコーゲンからグルコースモノマーへの加水分解に使用されています。
Aspergillus niger由来のアミログリコシダーゼは、Belgica antarctica幼虫ホモジネート中のグルコースを遊離させるために使用されています。また、デンプン消化に用いる消化酵素混合物に使用されています。

Biochem/physiol Actions

黒麹菌由来のアミログルコシダーゼは、オリゴ糖のα-D-(1-4)、α-D-(1-6)、およびα-D-(1-3)グルコシド結合を加水分解できます。
