アピラーゼは、二価カチオンの存在下で、ヌクレオシド三リン酸および二リン酸のホスホ無水物結合を加水分解します。 ヌクレオチドに対する基質特異性は低いです。この酵素特性により、DNAシーケンスや血小板凝集阻害など、さまざまなバイオテクノロジー用途に適しています。
