ウシ肝臓由来のカタラーゼは、各々が分子量 60 kDa の、4 つの同じサブユニットで構成される四量体です。これらのサブユニットの各々が、プロトヘムIX基に結合した鉄を含んでいます。この酵素はNADPにも強く結合し、このときのNADPとヘム基の距離は13.7オングストローム以内です。

CAT (カタラーゼ)は内因性抗酸化酵素であるため、ROS (活性酸素種)による損傷から細胞を保護します。この遺伝子は、ヒトではクロモソーム11p13に局在し、12のイントロンと13のエクソンで構成されています。

カタラーゼは、遺伝子形質発現およびアポプトーシスにおける活性酸素種の役割を研究する際の、天然の抗酸化剤としての役割として機能します。また、タンパク質、脂質および核酸を酸化損傷から保護するためにも使用されています。産業的な用途として、カタラーゼは牛乳やチーズに添加された過酸化水素を除去するため、織物を漂白するため、および E. coli. の DNA 修復変異体の生存性に及ぼす陽性作用を検討するために使用されています。

Biochem/physiol Actions
この製品は活性化剤を必要としませんが、3-アミノ-1-H-1,2,4トリアゾール、シアン化物、アジ化物、ヒドロキシルアミン、臭化シアン、2-メルカプトエタノール、ジチオスレイトール、ジアニシジンおよび硝酸塩によって阻害されます。
カタラーゼは、好気性生物のすべてに存在する抗酸化酵素で、代謝過程の副産物である過酸化水素を、より有害性の低い水と酸素に分解する反応を促進します。また、メチルペルオキシドおよびエチルペルオキシドなどの過酸化水素アルキルとも反応することができ、一方の H2O2 分子の代わりにメタノール、エタノール、プロパノール、ぎ酸、および硝酸を利用することもできます。カタラーゼ酵素は、補因子として鉄（Fe）またはマンガン（Mn）を使用し、Fe-CAT または Mn-CAT として分類されます。

1 unitはpH 7.0、25°C、1分間でH2O21.0 μmolを分解し、この間H2O2濃度は10.3 mMから9.2 mMに低下します(A240の減少率により測定)。
