Biochem/physiol Actions

β-カロテン（プロビタミンA）はカロテノイドの一種です。この抗酸化物質は、ヒトの生理機能に重要な役割を果たします。β-カロテンは豊富なカロテノイドです。これは、ビタミンEの特性を備えた脂溶性抗酸化物質であるビタミンAの前駆体と考えられています。

最も重要なプロビタミンAであるβ-Caroteneは、in vitroではラジカル開始過酸化反応を阻害することから、抗酸化物質に分類されます。しかしin vivoでは、細胞内環境に応じて抗酸化物質としても酸化促進物質としても作用するとみられています。β-Caroteneは多くのがんの発生率を下げる一方で、喫煙者における肺がんの発生率を高めます。
