General description
乳牛の乳には、タンパク質β-ラクトグロビリン（BLG）が含まれています。BLGは多くの遺伝的変異体で自然に生じ、最も広く見られるウシ変異体はBLG AおよびBLG Bです。
Application
β-ラクトゴロブリンは、過敏性腸症候群患者における食品過敏生の診断のために細胞学的アッセイに使用されました。
Biochem/physiol Actions
リポカリンファミリーに属するβ-Lgは、アミノ酸162個の低分子タンパク質で、分子量は約18,400 Daです。このタンパク質の特徴は8鎖β-バレル（鎖A～H）で、三重aらせんが続き、さらに二量体化インターフェースを形成する最終β鎖（鎖I）が続きます。
